Lotus Biscoff Blueberry Cheesecake Ice Cream (Iceland)

Despite my obvious love of bad-for-me snacking I do actually buy and eat a lot of fruit. I was on the Iceland website doing my grocery shop and I innocently searched for blueberries, as in the fruit. The second item in the search results was this tub of Lotus Biscoff Blueberry Cheesecake Ice Cream, I put this in my basket along with the first result; actual blueberries. It wasn’t my fault, I’m blaming Iceland!

I do like ice cream and Biscoff are one of my favourite biscuits so I was keen to try these out. I opened up the tub and found that the top layer of the ice cream was a Biscoff crumb, under is was a white ice cream ripple with blueberry. I scooped some into a bowl and tried it out. I loved the crumb topping, it was full of the nice spiced biscuit flavour. The base ice cream was super creamy and the blueberries added a nice fruity touch. I thought it worked well as an ice cream and one I’d get again. The only thing I would say is that two of us shared the ice cream and between us we had all the crumb topping on our first portions. When we go back for a third serving it will be without any of the biscuit which is a shame, I would much preferred the biscuit flavour to have ran all the way through. The whole packaging is branded with the Lotus Biscoff biscuits, not too much to ask for more of it in the tub!

Sounds rather lovely! My tip: buy a packet of Biscoff biscuits (Speculaas in the Netherlands) and make your own crumbs to sprinkle on top of your bowl of icecream. You can make as much of the crumbs mixture you want! A splash of Amaretto makes it an extra special treat! Regards, Nicolet (Schiedam, the Netherlands)
